Description
This recipe is not just easy, it’s unbelievably versatile. You can enjoy it plain, as a pizza crust, as a wrap, or even as a side with your favorite soup or salad
Ingredients
Scale
- 1 cup cottage cheese (full-fat or low-fat, your choice)
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the cottage cheese and egg.
- Use a fork or whisk to thoroughly blend the ingredients until smooth and creamy.
- Pour the mixture onto the prepared baking sheet. Use a spatula to spread it into a thin, even circle, about 8-10 inches in diameter. The thinner you spread it, the crispier it will get.
- Bake for 20-25 minutes, or until the flatbread is golden brown and set. Keep a close eye on it to prevent burning.
- Remove from the oven and let cool slightly before transferring to a wire rack to cool completely.
Notes
- Seasoning: Don’t be afraid to add some seasoning to the batter! A pinch of garlic powder, onion powder, dried herbs (like oregano or basil), or even red pepper flakes can add a lot of flavor.
- Crispy vs. Chewy: For a crispier flatbread, spread the batter very thinly and bake for a longer time. For a chewier texture, spread it slightly thicker and bake for a shorter time.
- Toppings: Get creative with your toppings! You can use this flatbread as a base for pizza, add your favorite sandwich fillings, or simply drizzle it with olive oil and sprinkle with salt and pepper.
- Storage: Store leftover flatbread in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
- Variations: Try adding a tablespoon of grated Parmesan cheese to the batter for an extra cheesy flavor. You can also add chopped vegetables like spinach or mushrooms.
