- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 1 teaspoon Cajun seasoning (store-bought or homemade)
- 3 cups cooked long-grain rice
Instructions

- In a large skillet or Dutch oven, brown the ground pork over medium-high heat. Break it up with a spoon as it cooks. Drain off any excess grease.

- Add the chopped onion, bell pepper, and celery to the skillet. Cook until the vegetables are softened, about 5-7 minutes.

- Stir in the Cajun seasoning. Cook for another minute, allowing the spices to bloom.
